Description
A rustic, gem of a Cab of crimson hue with a slight mauve meniscus. Bordeaux in style, this leathery- clad, pipe-toting chap rings of blackberry and moist truffle notes set into a honeyed canella oak structure. As the bouquet opens, notes of passion fruit, forest loam, and grandpa’s tobacco appear. On the palate, this wine is ripe with lush berries and mineral-laden earth notes, conjuring dusty, old books and a crackling smoky fireplace. The tannins are present, but don’t dominate, and lead to a coated mouth feel. The finish is remembered long after the last drop, with aftertastes of a well-made mature Cab. Try it with game, rib eye, roasted meats, beef stew, rack of lamb, and even swordfish and tuna steaks in hearty sauces. It is also perfect with aged dry cheddars. Age for 5-15 years after vintage.
