This Two Counties blend is 50% Fraser’s Cabernet Sauvignon from the ancient volcanic soils of the Red Hill AVA in Lake County and 50% of Sonoma Valley’s famed Atwood Ranch Cabernet Sauvignon, representing truly the best of both worlds. Chalky blackberry fruit meets softer more supple tannins, tying together dried herbs, star anise and sumptuous berries and mineral-laden earth notes—with just a touch of forest loam, and grandpa’s tobacco. An aftertaste of black tea and black prune linger on the finish. This monolith of a Cab is luxuriously balanced, and meticulously crafted. Pair with Moroccan skirt steak, rib eye, beef stew, rack of lamb, and even swordfish and tuna steaks in hearty sauces. For a good fromage pairing, try harder, salty, tangy, nutty aged cheeses such as Irish cheddar, dry jack, aged gouda, gruyère, and parmigiano reggiano. Aging: 5-15 years.
