Description
Cold soaked and punch cap fermented, then gently hand pressed. Yielding a very inky plum purple, “new wine” “new Car” nose, with powerful, but integrated fruit, and hints of plums, and a Welch’s grapiness tinged in anise. Pair with grilled hanger steak, Caprese or beet salad, stuffed portobello mushrooms, and almost any tangy barbecue sauce-laden meat. For fromage: manchego and Irish sharp cheddars.
