Boasting mixed adobo spices and a plush cab-like persona while asserting a balanced tannin structure, this sipper combines elements of blackberry fruit, good herbs, and an earthy-leathery minerality—giving it an untamed sort of burliness until it is tempered with more bottle aging. Pair with: fish tacos, paella valenciana, moussaka, braised beef short ribs, white bean and lamb cassoulet, or chicken mole.
